WE MADE IT TO THE EXUMAS! The islands of the Exumas have been our main goal for this leg of the journey. We finally got here and now I understand why it’s such a popular place for cruisers. It’s literally hopping from one beautiful island to the next, somehow even more beautiful than the previous. Most of the islands are completely uninhabited. Others are private, a handful owned by celebrities, and there are some with small settlements.
Allens Cay was our first stop in the Exumas. We had a pretty choppy crossing from Nassau, but arriving at Allens was definitely worth it. We anchored in the middle of Allens Cay, Leaf Cay and SW Allens Cays, so it was a pretty well protected place. As soon as we dropped the anchor, we jumped into the crystal clear water. It was unbelievably refreshing! After that, Jordan and I got into some serious Cinco de Mayo celebrating with chicken (canned) tacos and Coronas. Well, two Coronas in total. We’ve got a limited supply so they are only for special occasions.
Leaf Cay and SW Allens Cay had TONS of wild iguanas. They were awesome to check out, though one did run Jordan and I back into the water. Crazy iguanas!
We don’t have the luxury of fresh chicken or unlimited cooking fuel for this, but Jordan can make a DELICIOUS Arroz con Pollo in the pressure cooker. It’s my favorite boat meal! : )
What goes in:
1 can chicken
1 can black beans (with liquid)
1 cup rice
1 ½ cups water
Fresh chopped onion
Fresh chopped garlic
Salt, pepper, chili powder, cumin, bay leaf, lemon pepper, vinegar – all to taste! We like a lot of spice, so are pretty generous with all of these.
Sauté the onions and garlic in the pressure cooker pot, then add in everything else, cover and cook until the rice is done!
We’ve been in Nassau the past week because of bad weather that’s been hanging around. Ongoing squalls were predicted, so we decided to hunker down in a marina. It’s hard spending money in a marina instead of anchoring out with no cost, but this place was awesome! We’ve been at the Texaco marina in the Nassau Harbor and the guys that work here have been wonderful. Once again, we’ve made some great friends that we’ll remember forever!
We’re finally heading out early tomorrow morning to head to the Exumas. See ya! : )
